Use an electric skillet like a small oven and save the cost of heating the larger oven. Try a Jiffy cake swirled with pie filling for a simple dessert.
Use an electric skillet like a Crockpot and slow-cook a meal. I don't particularly recommend leaving it alone all day like I've left a Crockpot, but my mom very often left Sunday dinner cooking in hers while everyone went to church.
Use an electric skillet like a "hot-plate" when you have no access to a stove, oven or microwave. I used one in a college dorm room when I wanted something hot -- I didn't have my own microwave.

You can fry your foods without oil in the stainless steel oil core electric skillets -- just like the ones you see at the fair, but less expensive. When demonstrating an oil core electric skillet, a salesperson will preheat it to high and throw on a chicken breast. No oil. Fifteen minutes later, it's nice and brown, but not burnt. It's also juicy. Amazing! That's probably not the best way to cook normally, but it is impressive. Just be sure to preheat the oil core skillet or your food may stick to the pan.

Because the oil core electric skillets allow both waterless and greaseless cooking, it's a healthy way to cook. Many of us can stand to lose some weight or just cut down on the fat, so the "greaseless" aspect is attractive. The "waterless" aspect means you don't lose nutrients in excess water. If you want to use oil or butter, there's nothing wrong with it, but watch it closely, because it can burn quickly if the skillet is too hot.

They're also easy to clean. Even if you do burn something in one, just put a little water in the pan and let it boil; then you wipe it clean!
